Our second morning on the camp site we enjoyed freshly made buttermilk pancakes. I know it might sound a little gourmet for camping but it was actually quite simple. I prepared all the dry ingredients in a large Ziploc bag, on the exterior of the bag I wrote in permanent marker; the name of the recipe, the wet ingredients that need to be added as well as cooking instructions. Once we arrived on site all I had to do was invert the contents of the bag into a bowl add the butter, eggs, buttermilk and I was all set. Definitely better than using the store bought mixes and surprisingly simple to prepare, not to mention affordable.
Buttermilk Pancakes
Makes 9 6-inch pancakes
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 tablespoons sugar
2 large eggs, lightly beaten
3 cups buttermilk
4 tablespoons unsalted butter, melted
Heat an electric griddle to 375°F or a stove top griddle until very hot. Whisk together flour, baking soda, baking powder, salt, and sugar in a medium bowl. Add eggs, buttermilk, and melted butter; whisk to combine.
When making pancake batter its important not to over mix the batter. Do not try to mix until you have a smooth uniform batter as this will over develop the gluten in the flour causing tough pancakes. Instead mix to combine leaving small to medium lumps. The interaction of the liquid and the pockets of dry ingredients during cooking results in fluffy pancakes.
Heat oven to 175°F. Test griddle by sprinkling a few drops of water onto the the hot griddle. If the water bounces and splatters of the griddle, it is hot enough. Using a pastry brush, brush some melted butter or neutral flavored cooking oil (like canola) onto the griddle. Wipe off excess using a folded paper towel.
Using a 4-ounce ladle, about a 1/2 cup, pour batter onto the hot griddle, in pools 2 inches apart. When pancakes have bubbles on top and are slightly dry around the edges, about 2 1/2 minutes, flip over. Cook until golden on bottom, about 1 minute.
Repeat with remaining batter, keeping finished pancakes on a heat-proof plate in the oven.
